This is a hearty soup with a lovely tang of lemon. It is a yummy soup to make with roasted cauliflower and easy to make. Plus I love the flavour combination of artichoke and lemon. Ginger Tofu and Pak Choy Stir Fry
I am a lover of tofu and the ginger marinade really perks up this dish. The Pak Choi is a nice healthy addition to the tofu and is nutritious too! I have seen a few different spellings of Pak Choi and also seen it referred to as Bak Choy. Either way it is spelt, it is still a bunch of greeny goodness! Socca Pizza (Gluten free)
This is a wonderful discovery of a thin pizza base that is a low GI carb, gluten free and even vegan! It is beyond easy to make and can be rustled up quicker than it takes to eat it. This originates from Nice, in the south of France as a popular street food and a similar dish to this in Italy is called Farinata. You could continue to make this vegan by not using any cheese, may I suggest avocado instead on the toppings?
