This is a deliciously light dessert made from Ricotta cheese.   By the time it has been whipped up and flavoured it tastes more like a dish made out of cream rather than a soft cheese.   The berries go well with the lemon too.   The chief tasters verdict is that it was very light and refeshing.   Not a drop was left either! Leek, Almond and Cheese Loaf with a Lemon Pea Layer

This is something I made many years ago and had almost forgotten about with all of my recent cooking.  It even gets better in taste when cold, but it rarely makes it to that stage in our house once out of the oven.  The very first time I made it we ate the whole lot in one sitting as we adored the flavours.  The lemon pea layer lifts the dish to an almost spring/summer flavour and I think adds to the moreishness of this loaf. Roasted Cauliflower and Artichoke with Lemon Soup

Thick soupy goodness!

This is a hearty soup with a lovely tang of lemon.  It is a yummy soup to make with roasted cauliflower and easy to make.  Plus I love the flavour combination of artichoke and lemon.   I like the consistency of this soup to be nice and thick, but if you want it smoother, simply add more stock.  The photos do not really do the soup justice…if only you could smell how good this is! Prawns in a Lemon Marinade with Mint Pesto

Huge Tiger Prawn!

BBQ season is finally here in our house!  The prawns in our supermarket are often the size of a small fist and are a regular on our bbq.   Cheaper than the UK too – woo hoo!  This dish has a lemon marinade and the mint pesto really compliments this.   I cook this on the bbq, but you could do this on the stove via a griddle pan/frying pan too.    I think the mint pesto would be lovely with roasted/grilled veggies too.  Marinade, cook, eat and enjoy!   Yummy, tell me more Diva…

Baked Fennel with Lemon and Olives

This is a tangy flavour combination of lemon, fennel and olives.  Tastes as good as it looks and even has the husband seal of approval.  The aniseed taste of fennel is a personal one, but I like it.  It’s a nice surprise that something so pale in colour is packed with flavour.  Yummy, tell me more Diva…
