Leek, Almond and Cheese Loaf with a Lemon Pea Layer

This is something I made many years ago and had almost forgotten about with all of my recent cooking.  It even gets better in taste when cold, but it rarely makes it to that stage in our house once out of the oven.  The very first time I made it we ate the whole lot in one sitting as we adored the flavours.  The lemon pea layer lifts the dish to an almost spring/summer flavour and I think adds to the moreishness of this loaf. Cheese and Leek “Sausage” Rolls

One part of the Christmas tradition that I miss is sausage rolls (well, vegetarian versions for me).  I miss puff pastry but hey, that was the dark side and I’ve moved into a healthier light…These rolls almost compensate as they are cheesey and savoury.  The pastry is like a rich, shortcrust pastry, but hey it’s Gluten Free so tuck in! Leek and Cheddar Cheese Quiche (Gluten Free)

I have been playing around with various Gluten Free shortcrust pastries and made this quiche using a selection of Bob’s Red Gluten Free flours in addition to my usual almonds.  This can be frozen too which makes it handy to have ahead of time!  I mixed this in a food processor so it was easy to make, easy to eat!
