Leek, Almond and Cheese Loaf with a Lemon Pea Layer

This is something I made many years ago and had almost forgotten about with all of my recent cooking.  It even gets better in taste when cold, but it rarely makes it to that stage in our house once out of the oven.  The very first time I made it we ate the whole lot in one sitting as we adored the flavours.  The lemon pea layer lifts the dish to an almost spring/summer flavour and I think adds to the moreishness of this loaf. Cheese Vegetarian Sausages

Yummy, veggie sausage goodness

These sausages are perfect for us vegetarians, and my meat eating husband also like them.  They are simple to make and full of flavour.  The fresh sage blends well with the cheese and gives the sausage a nice added flavour.  I use bread crumbs from my gluten free healthy bread but you could use breadcrumbs from any gluten free bread of your choice. Cheese and Leek “Sausage” Rolls

One part of the Christmas tradition that I miss is sausage rolls (well, vegetarian versions for me).  I miss puff pastry but hey, that was the dark side and I’ve moved into a healthier light…These rolls almost compensate as they are cheesey and savoury.  The pastry is like a rich, shortcrust pastry, but hey it’s Gluten Free so tuck in! Cheese Biscuits (Gluten Free)

Mouth melting yumminess...

These went straight to the top of my favourite savoury biscuit recipe.  They are very similiar to cheese straws with their melt in your mouth texture..but are low carb and gluten free! Huzzah!  The mixture can keep in the refrigerator for a few days so you can have a backup plan for when you have an urge for a cheesy snack.  Especially since they do not take long to cook!  The cayenne can be optional but I like it for the slight kick it gives combined with the cheese.
