Souffle Omlette with Goats Cheese and Spinach


A souffle omlette is an amazing way to get a decent sized omlette out of just 2 eggs.   Very handy for when you open the fridge in the morning and realise that you should have gone shopping the previous night and are staring at a couple of eggs with a hungry husband on your hands…or a hungry tummy yourself!  This is also a lovely light supper dish as well as a decent breakfast.  Yummy, tell me more Diva..

Cannelloni with Spinach and No Pasta!

This is a cannelloni dish using small, thin omlettes instead of pasta tubes.   Pasta is one of the things we used to eat a lot of before our low carb days and this is a great subsitute.  The filling here is spinach and cream cheese, but you could use fillings such as chicken, fish, cheese and onion, other veggies…the choice is yours.  Yum, tell me more..

Savoury Egg Muffins

Sometimes breakfast can become mundane on a low carb diet as it just seems to be an endless routine of eggs.  The solution?  Jazz them up and cook them in other forms rather than the trusty omlette.   You can use a variety of vegetables such spinach, tomatoes, onions, pepper, courgettes and various cheeses.  You could even add some form of meat…but I don’t do that.   Yum, tell me more

Mayonnaise

Once you go homemade, you cannot go back to the white slop supermarkets sell in jars.  No nasty preservatives or chemicals…home made is full of protein and good oils.   It is easy to make although I confess it took me a couple of attempts to get it right.  Followed by tears, temper tantrums and solace in a bottle of wine.   I now make it with an electric whisk and could now whip up a batch blindfolded.  Yum, tell me more
