Prawn and Vegetable Foo Yung

This is a protein packed Chinese style dish made of vegetables, prawns and omlette.  It is fairly simple to prepare and results in a hearty dish that is large enough for two people to share.  Or one if you are very hungry.   If you halved the quantities below you could cook it in a smaller pan and voila!  A dish for one.   Yummy, tell me more Diva..

Prawn, Zucchini (Courgette) and Lemon Salad

I cooked this for a recent bbq and it soon dissappeared which I took to be a sign of approval.  Mind you, I used large prawns that are usually a crowd pleaser.   As a vegetarian, what do I know..I cannot taste it, I just guess the flavours and hope for the best.  A clean bowl/plate is the best indication that it was well received! Prawns in a Lemon Marinade with Mint Pesto

Huge Tiger Prawn!

BBQ season is finally here in our house!  The prawns in our supermarket are often the size of a small fist and are a regular on our bbq.   Cheaper than the UK too – woo hoo!  This dish has a lemon marinade and the mint pesto really compliments this.   I cook this on the bbq, but you could do this on the stove via a griddle pan/frying pan too.    I think the mint pesto would be lovely with roasted/grilled veggies too.  Marinade, cook, eat and enjoy!   Yummy, tell me more Diva…
